This is my new experiment with Asparagus!!! Last week when I called my best friend, she was preparing “asparagus curry” . Wow!!! That sounded very interesting to me. I never thought of cooking curry/Indian version with asparagus. So, decided to try my friend’s recipe. Got a fresh bunch of asparagus on Sunday and couldn’t wait to try it yesterday!!!  As this is the first trail, I was little skeptical that if it’s not tasty, my hubby and aashu wouldn’t eat it for the next time. So, I added my mom-in-law’s touch to it (she follows a unique way of adding besan to some curries to enhance the flavor). The trick worked well and they loved it a lot!!! It tastes so similar to tindora. What I liked more about this is it takes only 5 minutes to cook asparagus (so tender). Moreover is rich in folate, very healthy (Feeling bad for missing it all these days)!!! Will try more recipes with this and post them soon. Don’t miss this wonderful veggie and try my recipe soon.

Preparation Time:  15 minutes

Ingredients:

Asparagus: 1 bunch
Onions: 1
Besan: 2 tbsp.
Oil: 1 1/2 tbsp.
Chana Dal: ½ tbsp.
Urad Dal: 1 tbsp.
Mustard Seeds: 1 tsp.
Cumin Seeds: 1 tsp.
Asafoetida/Hing: Pinch
Turmeric: Pinch
Chili Powder: as per taste
Salt: As per taste

Method:

  • Wash asparagus and bend it till it breaks at bottom (we can discard this hard part).

  • Cut it into small pieces.

  • Heat a pan with 1 tbsp. of oil.

Tempering

 

 

 

 

 

 

  • Add Chana dal, urad dal and once they start changing color, add turmeric, asafoetida, mustard and cumin seeds.

  • Wait till they start crackling and add onions to it.

  • Fry it for 1 minute and add asparagus to it. Add salt to it and cook for 5 – 7 minutes (varies depending on its tenderness).

  • Add besan (chickpeas flour), chili powder and ½ tbsp. of oil. Stir it well.

  • Cook it for 2 more minutes and turn off the stove.
  • Serve it with rice or rotis.
