Check my post after a long time (Super hectic days at work !!! Wanted to post this recipe from last 2 weeks). Aashu tasted fried rice recently and he started liking it. I tried it with paneer couple of times and wanted to replace it with tofu this time. I have used firm tofu and it came out very well. Try out this simple and tasty fried rice.

Ingredients:
Serves : 3
Duration: 30 minutes

Basmati Rice: 1 1/2 cup
Water: 3 cups
Tofu: 100 gm
Carrot: 1 (Big)
Cabbage: 1 cup
Spring onions : 1 bunch
Garlic: 1-2 pieces
Pepper powder: 1 tsp.
Salt: As per taste
Soy Sauce: 1 tbsp.
Olive oil: 2 tbsp.

Method:

  • Soak rice for 1 hour.
  • Wash and cook rice. Cool it completely.

  • Wash and cut all the vegetables into thin slices.
  • Cut spring onions into small pieces (both white and green parts). Chop garlic and keep it ready.
  • Either blend tofu or scramble it with hands roughly .

  • Heat a wide pan with 2 tbsp .of oil and add garlic and spring onions to it. Add white part only at this time.

  • Fry them a little and add tofu to it. fry it a little and add vegetables, pepper powder and salt to it.

  • Fry them on high flame for 3-4 minutes .

  • Now add cooked rice, soy sauce, remaining spring onions and stir it well.
  • Off the heat after a minute .
  • Serve it hot with Manchurian.
