Mixed Veggie Koorma

Hi Buddies,

Today, I made chapati and wanted to have my favorite koorma (my mom’s recipe) with it. Actually, I was searching for an apt name before posting this recipe ,as I always call this as “Neella Koora” (for some reason unknown to me J ). As a child, I always used to hate chapati and my mom used to bribe me with this curry to make me eat chapati 🙂 . When I got married, she has hand written all my favorite recipes in a book so that I don’t miss them (though I cook them, still miss mom’s taste). I made this recipe after I moved with my in-laws and they loved it a lot.It has become my hubby’s favorite dish and I cook it regularly now. Check this recipe and hope you will try it too.

Preparation Time:  30 minutes
No of Servings: 4-5

Ingredients:

Potatoes –medium size: 4
Carrots:  3
Beans: 15
Onions: 1 (big) or 2 (medium)
Tomatoes: 2
Cilantro/coriander: For garnishing
Oil: 1.5 tbsp.
Cumin Seeds: 1tbsp
Salt: As per taste
Turmeric: pinch
Red chili powder: 1tsp (adjust to your taste)
Water: 1 cup (adjust)

For Ground Paste:

Roasted Peanuts: ½ cup
Dhania / Coriander Seeds: 3 tbsp.
Sesame Seeds: 3 tbsp.
Fresh Grated coconut: ½ cup

Method:

  • Wash and cut all the vegetables into small pieces.
  • Cook them in pressure cooker (along with onions and little salt)

  • Meanwhile, dry roast peanuts, coriander seeds and sesame seeds in a pan (don’t add sesame seeds along with peanuts and dhania . Add them little later or else they will get burnt )

  • Roast them till they change color (you will get nice aroma). Let it cool down.

  • Add grated coconut to the mixture and grind it to fine paste.
  • Heat a 1.5 tbsp.  Of oil in a pan.

  • Add cumin seeds to it. Once they start crackling, add tomatoes and sauté it for a 1 minute.

  • Transfer the cooked vegetables to pan and mix it well.
  • Finally add the ground paste, turmeric, and salt and chili powder.

  • Add enough water to get right consistency.
  • Cook this for 5-7 minutes.

  • Turn off heat and garnish with coriander leaves. Serve it with roti.

Note: You can add more vegetables if you like (Cauliflower, peas).

    loved it! simple procedure and it looks so yumm..the best part is its without curd, paneer, butter etc., please post more vegan options like this one.
